Yes, writing it as しいいいらない is okay, but is relatively uncommon. More common ways to write this are:
- しーらない！
- しーーーらない！
- し～らない！
- し～～～らない！
- しいぃぃらない！ (with small ぃ)
Needless to say, don't use these in business settings or in formal letters.
