Metathesis is when sounds switch places, but no sounds have switched places in たいくかん or (what the OP incorrectly hears as) ぜいいん. Your other examples seem to be proper examples of metathesis, as they do involve sounds switching places.

It should be one hundred degrees Celsius in English. Celsius is an optional postmodifier and not the head of a larger noun phrase, so degree should be marked for number.

@KentaroTomono Just to be clear, that user said they do not have the answer to the question, so asking them to post an answer doesn't help. Anyway, the comments section isn't supposed to be used for calling people trolls.
